The only reason my druid still has skinning, after all these
years, is because I ran UBRS like 50 times to obtain that +10
dagger, just so that my guild could have a second Onyxia
skinner, just to make sure we had a stockpile of scales for
Nefarian. It was so time consuming to obtain that dagger that
there's no way I would give up skinning now, even though
skinning is a poor match with alchemy for my raiding toon
(who really should be a double crafter).

You should not let sunk costs factor into your decision making.
