Well, I'm not colorblind, but I understand it helps if there's more contrast in the game.
I am colour blind and the only things that I have a problem with are telling the difference between rare and epic item labels and the difference between the on and off states of the default combo point indicator.
Blizzard have fixed all the tooltips where something was indicated by colour alone and I replaced the combo point indicator with IceHUD.
Outside of raiding (which I've not done past Kara) I can't think of anything else where colour matters.
I believe that they often have areas in raids (and in some 5 mans) where you aren't supposed to stand due to damaging ground effects. I guess that they could cause real problems for colour blind people if they happen to be the wrong colours. For example, I would have problems seeing something red on a black floor (when I was a kid I got a summer job picking potatoes.... if the potatoes were red ones, I had to dig because I couldn't see them to pick them :P).
