My hunter has just achieved level 40. Up till now he's followed
skinning and leatherwork as a profession. Now that he's allowed mail
armour what's the best profession to follow from now on. I'm assuming
that he will need to abandon skinning/leatherwork.

Leatherworkers make some mail armor too somewhere along the line I
believe. Browse the leatherworking skill on wowhead or such and see
if there's anything there that interests you.
