Overall, imo, the best place to level mining after that point is 1000 Needles. Nodes are all over the place, from copper to, I believe, mithril (although the mithril are not as plentiful).
In Elwynn Forest there are numerous "mining tracks" that one can learn to follow, all good although not all equally good. Durotar has a small "mining circuit" in the north-eastern section but it's not even half as good as Elwynn. I've never done much mining in the Dwarven starting zone, so can't comment on it.
A real problem occurs at some point, IIRC around skill level 100, where there are few options for skill-up, until one reaches the next break point, something like 10 skill levels higher. That's very annoying, until one gets past it.
