You can solo as Holy, just quite a bit slower. Shadow is pretty OP at
level 80, good dps and plenty of mana and health regen. As Holy you
have a couple of mediocre dots and a couple holy attack spells, plus
your wand, so it's slower naturally. But spend the 1000g on a dual-spec
and you won't have to worry about it. It's very cool.

however, one of the fastest ways to make me play my hunter over my
priest is for idiots on my team to pull stupid maneuvers and scream
HAEL ME! while im trying to make sure the tank stays up. I remember
rogues being real bad about that

If they're real bad I'll toss em a Renew when I remember and then be
pretty slow about anything else for that snotty rogue if the tank has
even a slight bruise on him. :) And it's np since I'll just rez the
rogue after the fight, right?. They have to learn somehow.

Re: your original question, I would go with your 60 priest all the way.
Both healing (holy *or* disc) and shadow priests are in high demand, and
you'll have a faster way to experience all the cool new content in
Outland and Northrend. My "main" is a dps/tank warrior but I'm finding
myself playing the holy/shadow priest more often now. When I get bored
with dps and tanking becomes a drag, I look for a healing spot to
exercise my Grid+Clique skills and suddenly the game is fun again.
