It's a bit like how heroics work. If you've cleared a heroic it will only
reset the next day, and if you try to enter before that you'll return to
the cleared instance. Now, for raid instances those resetting periods are
longer, for most of them it's seven days.

You can check all instances where you are saved from Social window ->
raid pane -> Raid info (a little red button on the top right cornenr of
the pane)


Its even easier now with the new patch.
Instance resets are marked on your calendar.
