I used to find those the easiest to win - all you have to do is get
the flag out of their base and you have a clear run home. Mage's
grab and blink used to work really well for that, rogues sneak in,
grab and sprint. My shaman kept swiftness pots for just that kind of
thing - jump down from roof, grab flag, drop earthbind, trinket if
needed and swiftness pot to get the heck out of there. I've seen
druids do it very effectively as well.

Thing is, if they are 100% defending, you can be 100% attacking.
100% of team defending doesn't mean 0% chance of getting to the
flag.
