Blizzard says it was an oversight on their part not to create any
recipes that will take you from 275-300 and it'll be fixed in a future
patch, but until then....

Yeah, you have to have uber fishing to get through that black hole. But you
can also go to Silithus and do the quest to steal the desert recipe that
lets you cook sandworm meat. That can get you over the hump.

Only if you're over 285 cooking already - 275-285 is a big black hole
for recipes with only fish or one from Dire Maul available. I skilled
up cooking on my undead priest recently, and had to fish to get me to
285, although at least it was nice and easy after that, just cooked a
ton of sandworm meat.
