My wife has a dark elf char (druid) lvl 6 and I've got a dwarf (paladin)
lvl 7. Since the races start as such a huge distance away, at what point
would we expect to have a reasonable chance to travel to a common area to
party adventure togeather?

Well she will have started in Darnasus which is in Kalimdor in the North west
You have started in the Eastern Kingdoms
What I do with every new Alt, is head straight for Stormwind, and she could do the same, the only class that needs to stay in darn is hunters as the Night Elf class quest in there.
She should head to ironforge, get the tram to stormwind then quest and level around SW and sent hill, i find the quests to 20 much easier.
You should get the boat from darn to darkshore, then a boat to men harbour, then do the walk of death to Ironforge, this takes 15-20 mins, you will die once on the way but every time you die your res at the ghost and continue your journey, get to ironforge and get tram to SW city.
Dont forget to get the flight paths at ironforge as you will need to pop back there later to weapon train.
Once you are both at SW, and assuming you both have Burning Crusade, try and buy a portal for the both of you to Shat City in outland, then make this your home, choose skryer or aldor, then you can hearth to Shat and use any of the portals to darn/IF/SW
Every ALT I do this for, SW city is much busier and more fun, darnasus on my server is like a ghost a town.
The quests in and around stormwind are great, and people will help you more, plus you have deadmines near, and when you get to 15+ you have stockades.
