I don't know much about the priest quests, but its probably something
similar to the warlock or paladin epic mount quests, where they
require mats that were abundant prior to the expansion, but are now
much more rare and therefore, cost a lot more money. Eye of Shadow
was probably something much easier to come by before the expansion,
but now is very rare to find. This person is probably targeting the
completist people who want to get all the class specific quests and
items.
For the warlock epic mount quest, items such as ghost mushrooms and
arcanite bars are selling for a lot more than they used to sell for
even though no one other than warlocks really need those mats anymore.
On my server, ghost mushrooms sold for 1g each prior to the expansion,
now they are selling for 2g 50s each, targeting the warlocks looking
to get their epic mount.
