My wife and myself are going to start WOW. We are both over 40 and might
be classified as not having the faster reflexes/reactions when playing,

I play with my partner too, we are both over 30, and the kids play, are you going to be in different rooms? is that the reason for needing voice comms? other wise just shout to each other hehe
I would suggest you start with a PVE realm, forget the role playing and pvp untill you learn the basics, then find yourself a decent character.
For your first toon, I would suggest one that is easy to level, and fun at the same time, Hunters are one of the most fun, due to having pets guns swords etc. You could role a hunter for yourself and perhaps a druid for the missus then she can heal you and you can tank for her :)
Here is my view on the fun factor of each WOW character starting with the best/easist
Hunter = Fun with pets, wears leather at low levels, good fun > choose a dranai then you can heal too :) (gift of the narau)
Paladin = Very strong like a warrior but can heal and multitask - Seals and stuff can get complicated
Druid = Like the pally is is strong and can change into different forms to make fighting easier, can also heal
Warlock = another pet class toon, but wears cloth so can be hard to level and is complicated for new starters
Warrior = Can't go wrong with a warrior, easy to level, strong, good fun,
Mage = Hard work but can be fun, once you get used to a mage its great, but can die very quick, fire mage does lots of damage
Priest = Like the mage, but has better self protection, lots of spells, good DPS too
Rogue = Hmm these are prety hard for leveling, they are great at high levels, and twinks (low level but good gear) but can be difficult for first timers.
Shaman = Hybrid class that combines lots of different skills, fairly easy class, but a bit complicated again, totems etc
I have never rolled a horde so always stick to alliance, I like the characters and i am used to the areas for questing etc, up to you who you choose, good luck with that.
End game lvl 60-70 all characters have their benefits, and all are needed in raids, instances etc.
