I'm on a PvP server and the undead racials seem very suited to that, as
well as that I'd like to do arena with this character later, but would
also want to raid.

Then again, I'm not a big fan of the male undead look. I've rolled a
female undead priest and a male troll priest, both are now at level 6.
I would prefer to play a male character, so in that regard I'm leaning
toward the troll, but I'm quite particular about squeezing benefits out
of my build and that would probably be the undead. I know it's probably
not such a big deal, but I don't want to regret my choice later. Any
input from you horde priests out there?
I think the Troll racial spells are better than the Undead.

Your choice might depend on wether you want to PvP a lot, because the
Undead racial is great for this, while the Troll seem more suited for
PvE, especially for a caster

I have never had any regrets from choosing a Troll for my priest, while
I have heard from Undead Priest that they did envy the spells.
