This is inevitible as most people don't play the AH right to begin
with. There are other ways of promoting the sale of your auctions
other than undercutting other players.
You might also consider the fact that even as there are more
jewelcrafters joining the fight, there are also most players reaching
a high level. This means more of a demand for gems to socket. So I
would say your profits shouldn't change too much. If you want to stay
ahead, start getting some of the more rare designs, something you can
sell for a higher price simply because not everyone can make it.
Check out Wowwiki for designs that are BoP drops from mobs and farm
those.
Damn it, my work blocked Wowwiki. So far I almost have all the ones
you can buy (still have to get a couple of meta's) but I've had zero
luck with the BoP ones dropping. Most of them are for knecklaces and
rings anyways and the big money is in gems.
And it's not so much that the server population is rising, it's just
that more people are become JC's or making alt's who are choosing it
as their profession.
