I guess there is the expectation that a lvl 63 knows all about
instances, but some (most) people are just jerks. As stupid as it
sounds, I watch what party members do around passive scenery animals
(chickens, cow, deer). I have left a party if someone keeps killing
them. Generally I've found that a person who does that is not nice to
be around. Yes, that's stupid, but it's also fairly accurate.

I agree. There's no point to it. One guy I grouped with kept shooting them
and laughing. I left really quickly.

Depends on circumstances really... and on the critters. My human
character hates rats and snakes and will always kill them - usually
with something like an 800-damage crit from his crossbow. :) Part of
the fun it is to see how much overkill there is. With my troll
priest, I have a habit of setting Shadow Word: Pain on rats -
because it doesn't damage immediately. The rat gets the debuff, and
runs away like mad in a straight line - then the dot ticks and they
squeal and do a little somersault as they die. :> Frogs do
something similar too. My blood elf rogue has a mean streak and will
often take out stray rabbits or squirrels with one of her throwing
knives, just because.

Of course, I play on a RP server so these kind of quirks tend to be
IC. And I don't do it over and over annoyingly. :) I can't say as
I've ever randomly attacked sheep, cows, deer or such things though.
Well, I often kill those diseased ones in the Barrens, but that's an
act of kindness.
