Defense adds to a warriors dodge/parry/block rates IIRC, on top of
some other complex factors, so if he had a bunch of it, then he was
probably mitigating or avoiding a lot of the hits.
Enough defense skill can also completely mitigate critical hits to the point
the mobs will rarely if ever get a crit on you. They may get the odd
crushing blow instead, but those are far fewer than crits. That's why people
in endgame guilds want their warrior tanks to try and reach 490 or so
defense skill via gear. 350 natural, plus 140 wanted from gear which is very
doable.
The key stats to look at for damage mitigation are: parry %, block %, block
value (armory doesn't show this all added up nicely, just block rating which
is block %), dodge %, and armor amount (which when mouseover'ed shows the
damage reduction).
Again, armory can't exactly show how good it'll be, especially for paladin
tanks. Their block % may seem low in the raw stats, but when you add in the
proc rate of redoubt and use of holy shield, a paladin tank can block a
helluva lot of hits (block reduces dmg taken based on block value). That's
why playing a hedgehog paladin often sounds like hail on a tin roof.
