Little undead priest

I'm running till 60 with my new pg, undead priest un PVP server... it's
my 3rd pg, so i know well low level horde lands; also with the full
shadow spec, she (eljianna) is only a lil' priest, so i'm having some
problem with Hack'n'Slash quests... In Sepulcher&Co. i've found the
quest are veryvery fight-side and in barrens i've already done quest
with 2 char... what i can do if i have to do quest in solo (i'm on an
old server, full of 60)? i don't want to do quests already done, but i
don't know where i can go and survive!
any help?

Currently I'm flying to ever spot and collect herbs on the way, and I often end up with 5 full stacks of various herbs before I can turn this quest in. ...
