No, you can't expect to keep up with the joneses and invest a fraction
of the time they do.

Did you read what they've got coming in the expansion? AQ is one of
those things that they've been working on since near release, and in
response to complaints like yours they added mara and DM ahead of their
raid content. There's a blue post in the community spotlight this week
that says exactly that. It takes an exceptionally long time to develop
new content, and players are eating it up faster than it can be
produced atm.

So, you're bored of the existing 5 and 10 man instances(after 10 runs)
and outdoor content, but you want them to make more of it. Players who
only play a few hours a week do have the chance to get lucky and grind
epics. Did you know that bosses in temple, BRD, BRS(upper and lower),
Strat and Scholo all have a chance to drop epics? As far as not enough
lvl 60 quests, there was more than enough for me. I still have 12
quests in my log that are not repeatable and since I hit 60 35 game
days ago, I have been trying to finish all of them.

Do you have any idea how much work it would take to make a 20 hour long
chain quest? The warlock epic mount quest, perfect example. It takes
maybe 10 hours in game to complete(half your planned 20 hour goal), and
that includes 3-5 hours grinding moonkin for a 20% drop item, the chain
is 5 quests long I believe, involves around 10 NPCs, 4 zones, many
scripted sequences with specific animation and mob behaviour, special
items, and a ton of gold. Doomguard, same thing, long grinding to
collect stuff. Collection quests with lots of grinding are boring too
right? Onyxia chain is another good example, I probably spent 30+ hours
on it both solo and doing instances. It was fun and no, there was no
epic cookie for finishing. Speaking of Onyxia, here's an encounter that
takes 30 min from start to finish, yes, you need to find 39 other
people to do it but its still a fun fight after doing it for 6 months.
Every quest, zone, faction, NPC, instance etc in the game has to have a
story that works with the lore and the rest of the in game world, it
takes awhile to set it up.

Agreed, but you don't have to be an honour farmer to rep up with the
battlegrounds faction and get the vendor epics. The fixes they've put
in pretty much kick the casual gamer square in the teeth though.(10 min
loser token, deserter debuff)

Go play EQ then. The content in WoW takes a long time to develop
because the game is great, and the game is great because the content is
well developed.

Please do. You don't like BG, you don't like raiding, you don't like 5
man instances, you don't like the existing quests. Cry more. Basically
it boils down to: I want epics guaranteed without relying on the rest
of the players in an MMO.
