Deadmines drops Defias Leather set items.
Wailing Caverns drops Embrace of the Viper (leather) set items.
Scarlet Monastery drops Scarlet Crusade (mail) set items. Also, the boss
at the end of the Armory instance of Scarlet Monastery can drop a mail
helm with +1% crit.
I think Uldaman, Mauradon, Zul'Farrak, and Sunken Temple all have good
leather/mail drops too, but I don't recall anything specific.
Try reading the class forums at www.worldofwarcraft.com and see if
someone has posted an "item guide" or "itemization guide" that tells
where to get good items for your class.
