We've cooked with it several times, and used it at the Royal to
inject thighs. The flavor is very nice.
I also like adding a salty element to it, since we didn't brine,
only injected. (Do you ever do both?)
I never thought about doing an injection with fat and honey, with
honey being a fine emulsifier to keep the injection homogenous,
where usually you can't get a fat into the injection without a lot
of separating. Salt can be added, or a little salty chicken broth,
and it holds together. We didn't score highly on chicken but that
was mostly a timing issue with the skin not getting tender enough.
Flavor was great.

How bout reposting it? You know, since it was good and

It was nice and simple. Actually he posted it in a discussion about
turkey. Equal parts melted butter and honey, seasoned with garlic
powder. I mixed it 50/50 to start but it lends itself well to some
tinkering, particularly with salt, chick broth, or apple juice.
When I used his injection on breasts, I brined them first, but on
dark meat, injection only. If you brined, obviously, don't add
anything salty to the injection.

I love simplicity. Yes, I've combined brining and injection. It's
most notable in the breast, but the honey/butter/garlic combo makes
a drumstick worth fighting over.
A turkey is so many different kinds of meat that I prefer to just
cook one at a time. Brined, injected breast one time, injected
drumsticks another.

Can someone point me to a type of injector that works well? Don't want
something expensive like have seen some of the competition groups use
as it won't be used all that much. Had purchased one that was built
like an oversized medical needle/plunger that didn't work worth a
damn. (Or maybe I used it incorrectlly.)
I recommend this one, or something similar.
