Ping TFM - chicken injection



Hey, TFM, your injection for chicken is good stuff!

We've cooked with it several times, and used it at the Royal to inject
thighs. The flavor is very nice.

I also like adding a salty element to it, since we didn't brine, only
injected. (Do you ever do both?)
I never thought about doing an injection with fat and honey, with honey
being a fine emulsifier to keep the injection homogenous, where usually you
can't get a fat into the injection without a lot of separating. Salt can be
added, or a little salty chicken broth, and it holds together. We didn't
score highly on chicken but that was mostly a timing issue with the skin not
getting tender enough. Flavor was great.
