My Q partner and I picked up a couple whole eye of rounds, choice angus, in

The first one was cooked last week. I cooked it at 340F. I was disappointed
that the meat was not very tender. It's a very lean cut, but then so is beef
tenderloin.

Should this cut be done at low temp? Being round, I'm guessing that is the
problem with the first one... cooked too hot.

Or maybe I should just grind it up. ;-)

I used to buy Round steaks for chili, stew and such. I have given up because I do not like the result. Too chewy for chili. I am now using Chuck Roasts or steaks exclusively for chili, stew, etc..

Eye of Round roast, I think we had a discussion on this a while back on abf. I think the conclusion was it was good if it was cooked to around 140 and used for sandwiches.. Don't remember if there was a discussion at what temp to cook it though. If I remember or can find the posts, I will let you know.. Might be a day or 2 though.

Got an 89 Toyota that I got to get started today .... get licensed, get the exhaust fixed and start driving it more often.. Keeps the city happy!!
