Ingredients in Boudin can also be regulated by personal taste.
You won't find Liver in any that I make for instance. <g>
If I want liver, I can and have made liverwurst.
I have a French buddy who makes Boudin. I'm sure he is the one who told
me it was blood sausage. When he moved to the islands, his new in-laws,
Creoles, picked him to be the sausage maker for his first Christmas
celebration there. They gave him a pig, and the rest was up to him:O)
