I have a dumb question. What are you taking the temp wit?. Are you
sure it's working correctly?

The reason I ask is I trusted a thermometer once and WAY over cooked
my meat. Now I test with two.

Is it possible the device is lying?

Hand, experience and experience. We don't need no stinking thermometers!

Truth be told, I use a thermometer on chickens and pork loin. The rest is by intuition.
