I've smoked salmon in the past and have gotten good results. I
recently spoke to the owner of a fish market who recommended that I
use the larger salmon filets, 3-4 lbs each, rather than the 1-2 lb
filets I've used in the past. He noted the extra fat as being a plus
for smoking. I just don't think I'll get good smoke penetration on a
really thick filet. What size filets do you typically use?
FWIW- I steak cut my salmon when I smoke it. That is for direct use (diner) that night.
