My butcher knife, boner and filet knives are Chicago Cutlery. I bought
them from a factory outlet store in Branson, Missouri many years ago.
Not problem keeping them sharp. I maintain all of my knives with a
well worn 200 grit diamond "steel" from EZ Lap.

That's classical Missouri roadside stuff... that and the Walnut Bowls
Factory Direct stores. Good stuff for good prices.
