I've only had wild boar twice...
The first time when I was 13 at a fancy schmancy restaurant in Big Sur
(Ventana's) and the second time a few years back when a friend's who
then lived in an off-the-beaten-path homestead in the Santa Cruz
Mountians shot one of the boars which was terrorizing his vegetable
garden.
In that latter case, we went down for a visit and when we arrived his
youngest daughter came running out to greet us with the refrain (which
we heard almost continuously all that weekend):
"DADDY SHOT A BOAR!, DADDY HOT A BOAR!!"
Anyway, he may the biggest batch of black bean chi;i with that board
meat and it was pretty darn good.
So, my fote would be with the others....gotta slow cook that feller
and break down the collagen.....otherwise you gonna have some tough
meat to chew...
