It falls to the bottom of the cooker. Some folks put a foil pan under the
meat to catch the drippins. Some smokers have a drip spout so the grease
can be drained from the cooker. I cook mostly in a horizontal 55 gallon
drum that has no spout so I take the ash from previous cooks and place it on
the other side to catch the drippins. Once the cook is over and everythings
cooled off I get out a small dust pan to scoop the stuff away into a plastic
trash bag that destined for the trash. It works for me.
