2. Any thoughts on doing part of this in the oven, say 2hrs at 250
and finsh on the kettle as above(obviously to cut down coal time and
fiddling?

Yeah, I got thoughts on it. Do it. Why not just do it all in the oven?
If
that's what you like, then just do it

Don't call it BBQ, though.

Or, you could get a *REAL* smoker and decide that the time that you
actually
spend SMOKING the ribs is worth the taste difference. A "Weber Smokey
Mountain" comes to mind.

I use a small weber. I'm not sure of the diameter, but it suits most
of the barbecue/grilling I do. The kids have grown up and left and my
wife and I both enjoy barbecues (or grilling, if you you prefer). I
split mine into 2 parts; 1/2 right over the coals and the other 1/2 to
one side for indirect cooking.

This means I can cook slow and steady for some things, e.g. chicken on
the bone, and grill quick and hot for others, e.g. chicken breasts and
steak. Most of my cooking has a combination of both.

I understand why you're thinking of cooking some things in an oven. It
can make the whole thing seem a bit easier. However, a kettle barbecue/
grill, and weber are probably the best, is a very versatile tool.
Cooking, even on a barbecue/grill, is an art and takes practice. So
let me encourage you. Try different things. If they don't all work out
first time, don't worry about it, just learn and move forward.

You should be able to cook just about anything without using an oven.
Just give yourself time and think about preparation.

Above all, don't let the idiot comments put you off. Anyone who
thinks they know it all is actually closing their mind to a whole
world of new experiences.

Enjoy your cooking.

I guess I will take your advice and just try different methods. I know
thats 1/2 the fun for many but I feel bad when the results look fine... but
when you bite in.... "somebody call for pizza.." 8-)) Well tomorrow I'll
give it a shot!
