Any wood you can smoke with.

I think the general consensus (at least here in AFB) is that
planking fish just a gimmick. You could throw a cedar chip in
there and get the same effect.

I think the advantage is that you can plank a fish in your household oven,
provided you turn of the smoke detector :D
