Thanks for the replies guys. Will be doing the thermometer & fork tests
as opposed to the clock. And my smoker runs at about 200-225 degs
(can't adjust element on my electric & can't use another heat source
due to local & state regs for condo) so I'm good to go there.

Thanks again. Here's hoping. I've done pulled pork a bunch of times now
& it came out great. Now it's time to re-try brisket.
