First ribs smoked with lump, bradford pear smoke wood



I finally got a chance to fire up my WSM again. I used lump for the
first time - I usually use Kingsford. I had a little trouble getting
the temperature to stay hot enough. But, the ribs came out great. I'm
not sure about the bradford pear wood. I had some chunks left over
from splitting up some wood. It didn't smell as good to me as hickory.
But, really the ribs were good so maybe that doesn't matter much.

One other wierd thing about the lump is that it didn't last as long. I
put a full ring of charcoal in there and after 5 hours it was almost
gone. I ended up throwing extra wood in there to heat things up. I
think that may have added a little too much smoke for the meat.

I guess with lump I could have just refilled the chamber and thrown on
some lit coals and it would be off again. It only took about 15
minutes to get 1/3 chimney of lump going.

Anyway, I really like how fast lump charcoal lights. I never
understood the point of chimney starters with kingsford. It took
forever to light for me. But lump works great for that.

I guess it looks like kingsford burns longer for the same volume of
charcoal. Tommorrow I'm going to check and see how much ash is left.
To me, that might be another lump advantage. In my regular Weber
kettle it seemed like the lump didn't leave any ash at all. In a WSM
that would be helpful for a long burn (like for pork shoulder) because
the bottom of the smoker wouldn't fill up with ash.

Anyway, enough from me. I did some ribs and my wife and children both
liked them.
