In this case, there isn't any implication in the film to suggestion
Palpatine was simply returning to his 'original' appearance. Although,
interestingly enough, people involved with making of the film have said that
that was how they interpret the scene.
There is some small implication in the Clone Wars animated series, when the
Sith-wannabe meets with Dooku, and hides her appearance for the first few
minutes of the conversation.
Personally, implication or no, I much prefer the "true form" explanation,
simply because I've always liked the idea of the Emperor being centuries old
(as his face in Return Of The Jedi would seem to suggest.)

I think you've kind of missed the point of the question. Think about it.
Palpatine loses his sabre in the fight with Windu, but has a sabre with
which to fight Yoda.
The 'Dooku' explanation actually makes a lot of sense (although, one would
have to watch the opening rescue scene more closely, to see what becomes of
Dooku's sabre (does anybody pick it up? Palpatine or Anakin? etc. etc. Even
if we don't see Palpatine pick it up, it's entirely possible that he took
it, unnoticed, while Anakin was busy with Obi-Wan.)
Then, of course, there's the simpler explanations... He somehow retrieved
his sabre, or he has two. Perhaps he even made a new sabre, though he
wouldn't have had much time.
Also worth mentioning... apparently that scene went through a lot of
changes. Originally, Anakin was there all the time when Windu was fighting
Palpatine, and Palpatine simply took Anakin's sabre, instead of using his
own to fight Windu.
As to the shape of Dooku's sabre, the Sith-Wannabe (what is her name?
Anij?) has identically shaped sabres in the Clone Wars cartoon. Frankly, I
didn't notice the shape of Palpatine's sabre.
