I think Helen Read -- and perhaps Greg Evans -- should probably weigh in on this.

I would personally go for scooping chocolate ice cream, or better yet chocolate marshmallow ice cream, with Nilla Wafers, or make a batch of homemade chocolate ice cream with crushed Nilla Wafers *in* the ice cream. Or make chocolate or banana cream pie with Nilla Wafer crust.
