White Chili
1 lb. boneless chicken breasts cut into 1/2 inch cubes
1 medium onion, chopped
1/2 tsp. garlic powder

In a large saucepan, saute chicken, onion, and garlic powder in oil

Remove from heat and stir in sour cream.

I made this for dinner, using one can of green chilies, leaving out
the cayenne, adding a sprinkle of paprika, and substituting Tofutti
sour cream for the dairy version. (I also added a little Texas Pete to
my bowl.)
And guess what? The 10-year-old pronounced it, "Perfect!" He's one
extremely picky eater so I'm delighted to find something nutritious
that we both enjoy.

For dessert we're having apple cake. This recipe gets rave reviews at
work.

Apple Cake with Glaze

Mix together:

2 C sugar
3 eggs
1 1/4 C oil
1 tsp vanilla
3 C flour
1 tsp soda
1/2 tsp salt
3 C chopped apples (2 large apples chopped small)
1 C chopped nuts

Batter will be thick. Pour into Bundt pan that has been sprayed with
Pam. Bake at 350 for 1 hour.

Glaze:

1/2 stick butter
1 C brown sugar
1/2 C evaporated milk (I use soy creamer instead.)

Bring to a boil and simmer for 5 minutes, stirring while simmering.
Pour over warm cake.
