At first years, probably they didn't have a relationship except Ron's
friend/Ron's little sister. A simple "hi, Ginny", "bye, Ginny". Mostly
because Ginny was terrified about talking to him and Harry not seeing her
as someone too important (despited the fact that he was probably fond of
her as being his mate's little sister). Eventually, Ginny became most
secure about herself and she didn't mind to talk to a Harry who saw her
like a sister too while they lived together at the Burrow and Grimmauld
Place. Remember that Ginny was who helped Harry in OotP (but I don't
remember how!!!: the chocolate episode!)

Then they started dating. They talked: even Harry indicated the spent at
least one memorable evening at the lake. And I am sure he didn't only mean
the snogging.

Yes, but how much dialogue was in the books? I don't have the books here in
front of me, and I haven't read them since each individual release, but I
don't recall much dialogue between the two (or words spoken by Ginny in
general). You allude to a similar experience with the help given by Ginny
in OotP: we remember she was there, but we don't remember what she did (or
said). If that's not indicative of a character being tacked on, I don't
know what is.
