Look at it. You would think that sometime prior to this, *somebody* would have mentioned that there were invisible horses pulling the coaches to and from Hogsmeade; Hermione would certainly have read her Monster Book of Monsters (and other books) and have known about them.

I almost go along with that, except obviously JKR did anticipate using thestrals else she would have had something else pulling the carriages along in earlier books such as hippogriffs(sp). The fact they appeared to go along without anything pulling them suggests she did plan to introduce thestrals later on.
That said, the way there were introduced does beg a few questions such as how come Hermione didn't know or other students talk about it (it sounds exactly like the macabre sort of thing that kids would want to know about to find out who in their class could see them)
