I thought it was because the Thestrals weren't conceived until OotP was
being written...

Techncially, but Harry never saw Lily die, nor as a baby could he
properly process if he did see it.

Look at it. You would think that sometime prior to this, *somebody*
would have mentioned that there were invisible horses pulling the
coaches to and from Hogsmeade; Hermione would certainly have read her
Monster Book of Monsters (and other books) and have known about them.
