I believe that most, if not all of the Death Eaters knew that Voldy
had created the horcruxes. I base this belief on the passage from GoF
when Voldemort is talking to the Death Eaters in the cemetary:

"And then I ask myself, but how could they have believed I would
not rise again? They, who knew the steps I took, long ago, to guard
myself against mortal death? They, who had seen proofs of the
immensity of my power in the times when I was mightier than any wizard
living?"

This indicates to me that Voldy DID disclose the fact to the Death
Eaters that he had created horcruxes... and after he lost his body
when the AK aimed at Harry bounced back, they believed that the
horcruxes had not worked.

And if this is true, then Snape would also have known about the
horcruxes. And if he did, then he didn't tell Dumbledore about them
as Dumbledore stated that he only realized what Voldemort had done
(created horcruxes) after the memory of Riddle came to life in the
diary (CoS). So if Snape didn't tell Dumbledore, then he was either:
A) on Voldy's side all along; or B) hoping that he would be able to
take over the Dark forces at one point in time.

It seems to me that if Voldemort made 6 horcruxes, then he used one when the curse backfired on him, so there should only be 5 remaining at that time. So, Harry doesn't have to find as many as he thinks.

No - it is clear that the number of Horcruxes will be 6 - that is the number Tom himself came up with and JKR would not have given us that information if it didn't mean something.

We also know that he did not make one that night - regardless of what other's say. DD says specifically that V failed to make a horcrux out of Harry's "death". While others will say that he used James' or Lily's death to make one - or that one was made accidentally - that is rubbish.
He could not have made a Horcrux after he sent the AK on Harry because Harry did not die - even if V had the chance to get off part of the spell before the AK rebounded. It is also clear that he would not have used James' or Lily's death to do so because they were not the "vanquisher" from the Prophecy - so they did not have the significance he would would have wanted.
