Quite a lot of them ignore or accept the bad hair problems, with some
really? i thought snape fanfics were all like, 'his hair was so shiny
but it looked greasy in the bad light of the dungeons' and 'he isn't
really a nasty person but he had to keep up the pretence' and 'he
wasn't really into dark arts, it's just a case of needing to know your
enemy'

putting it down as an occupational hazard of being a potions maker. I
suppose this is reasonable, in that if you didn't think Snape as
described in Canon was at least interesting, you wouldn't be writing a
fanfic about him in the first place. His teaching style is usually
covered by "well, how would you like to have to teach a load of idiots
most of whom don't even want to be there?" I recommend stories from
http://ashwinder.sycophanthex.com/ as an interesting read. If nothing
else, it's awesome to see the contortions people will go through to make
the Snape/Hermione ship float these days.
Just out of curiosity, I toyed with the idea of writing a fanfic in
which Hermione's advice to Ginny to get over Harry and think about other
boyfriends was actually inspired by a reply by Snape to an unrequited
love letter from Hermione (I liked the idea of "Normally I simply return
such letters corrected for spelling and grammar, but in your case I
could find no errors"). I couldn't get past my view of the character of
Snape - which is not the same thing as believing I know which side, if
any, he is on. I think his introductions to Potion-Making and the Dark
Arts, and his treatment by the other Death-Eaters at the end of HBP:"The
Lightening-struck Tower" - "The three Death Eaters fell back without a
word. Even the werewolf seemed cowed" show somebody who views himself as
superior, and whose every action is motivated by a desire to gain or
demonstrate superiority. As such, I think that, like the Dementors,
Voldemort has far more to offer him than the other side, but perhaps in
the end he will find himself saved by Lily's love for him.
