Well, much as I would like proof that Snape is on Dumbledore's side, I
don't interpret the two statements the way you do. There's no reason
that Snape's saying, "fresh from my Death Eater days" can only mean
that he rejoined Dumbledore only after Voldemort fell. The way I
interpret it, it simply means that Snape was a Death Eater for some
period of time and then changed (or, pretended to change) sides at
some point and become a Dumbledore supporter.
So the two statements aren't contradictory. Snape spun (or honestly
told) a tale of remorse when he came to Dumbledore, which he did before
Voldemort fell. If you think Snape is Dumbledore's man, he felt true
contrition for what he had done when he was a Death Eater. If you
believe he's Voldemort's man, he feigned contrition in order to worm
his way into Dumbledore's confidence and become a mole for Voldemort at
Hogwarts.
(Oh -- if you think he's out for himself alone, then he feigned remorse
as in scenario #2 but is not a true mole in that, since then, he's only
been looking out for his own interests while pretending to both
Dumbledore and Voldemort that he's serving them. Though I'd prefer a
good Snape, consdering the content of the books and JKR's feelings
towards Snape, I'm leaning toward this interpretation.)
