Otherwise, what is the point of the first two challenges, if the
winner is decided on an obstacle course at the end?

And why would anybody punish the best competitors by letting the worst
ones get a head start?

I think the horse racing is an exception. In that case, the only
reason for determining the weight is because the horses are all being
given the same physcial task, yet they are not identical physically.
They are different in terms of height, weight, and conformation. If we
limited each race to identical horses, we wouldn't have many races.
So, they try to even the field a bit.

But in the case of the Triwizard tournement, they were given tasks
that relied on more than just physical issues, but more importantly
mental skills - knowledge, ability to think on your feet, preparation,
study, magical skill, etc. It wasn't just a physical race.
