Optionally I use VNC or secure VNC which is easier but has some issues with Vmware I cannot ignore.

I stumbled on to something called "RealVNC".
http://www.realvnc.com/products/personal/4.3/

Works like a champ with two PC's side-by-side once I opened up
ports 5800 and 5900 on the server PC.

But I'm connecting by specifying local IP address.

Seems like a piece is missing for when the other box is 100 miles
away on the end of a DSL modem.

Or is it as simple as calling up IpChicken on the other end,
getting the public address of that PC, and entering it on the
client end to connect?

I'm thinking the answer is "No" bco the possibility of many PCs
hanging on that DSL modem.

If that's the case, what's the term for the missing piece?
Something with "tunnel" in it's name?

You are right as I suggested elsewhere.
RealVNC works well but you can get issues with it running all the time as I have seen people trying to hack into it.
What I do is use a non standard IP port from the default 5800, 5900. Use a strong password and then don't have the user fire it up until he needs you to connect into his PC after telling you his current IP address.

Currently I run my all the time with the router port opened on a non-standard port, strong password and dynamic DNS as my IP changes whenever it reconnects.. which is often on my fixed wireless connection.
