I don't think you will have a problem today. Last summer (July and August), a lot of the motherboards were designed for 1.8v ram and would not work with 2.0 or 2.1 volt ram (most DDR2 6400 (800MHz) memory requires voltages over 1.8v, so it was a problem). But the problem was really in the BIOS, and at this point it's been fixed for several months in all of the motherboards that I'm aware of.

I am a little confused about RAM. I know I want the DDR2-800, but I
have read some things about the P5B needing RAM running at 1.8V. I
have found RAM like that, but some of the recommended RAM has specs of
2.0V and 2.1V.

Would that voltage be a problem? I do not have any spare 1.8V memory
that I could use for the initial boot so that I could change the
voltage in the BIOS (I think that is what I would need to do)

Any thoughts on what type of RAM to get for the P5B?
