Question for anyone running SLI AND 2 monitors ( or anyone who can answer my question.)

I'm looking to build a system with 1 vid card and SLI capable. I plan
to run 2 monitors off of this one card. However, should I add a
second vid card and run the system in SLI can I still do 2 monitors?
Or must I d/c one and game then connect the 2nd monitor when I am
done?
