Comedy macchiato

In Britain, macchiato in non-Italian cafés is now served with a massive
pyramid of frothed milk on top.
It looks more like a Mr Whippy ice cream than coffee. I giggled when a
barista plonked one of these down in front of me the other day, and she
looked puzzled. This was in Caffe Nero, where they're "Italian about
coffee".
Now, macchiato is a bit fake these days. It made sense when espresso was
brewed with boiling water and needed something to take the bitterness away.
But if you don't want a full latte and an espresso is just a bit too short,
it's a reasonable choice.
So baristas need re-educating in the art of the espresso macchiato: You only
need a little spoonful of milk, not too much froth, so it goes dark brown
when you stir it. Imagine you're in 1950 Naples and the Marshall Plan is
just around the corner so things need rationing. Remember that macchiato
means "stained", not "turned into comedy coffee".
