Good suggestions, all. Thanks so much. I spent a few hours in El
Paso this afternoon picking up some pie pans, cake pans, pizza flats,
sifters, icing knives, spring form pans, etc., etc. I think I got
enough to get the menu pretty well overhauled which I need to do
before the students come back for the fall. Right now the bakery is
only operating 6hrs, seven days a week and we need to increase the
utilization considerably. Tough job to work on sampling all that
stuff, but I'll solider through it. I've been having to taste mounds
of maple glazed spudnuts which I'm working on myself. Hopefully I'll
get some pics posted of the product samples.
