I hear what you're saying, and I read what CoffeeAm says on their web
page. However...

Ground espresso performs very differently over 2-3 days if you start with
fresh roasted coffee. Shot times decrease rapidly. What will start out
as dripping honey will gush out two days after grinding, if the beans were
fresh. Just sayin, based on experience.
