I have been grinding coffee as I need it and after some practice I'm
able to estimate how much to grind for each brewing. Still, I

Yes, coffee will go stale much quicker after it's ground.
Should I keep my beans in the freezer, refrig, or what?
If you buy in larger quantities (over 1 lb) keeping some in the freezer is a good option to help maintain freshness of the beans. Thaw to room temperature before grinding.
After opening a sealed bag of beans, I've been closing it tightly with
a rubber band. Should I continue doing this, or, should I put the
beans into some sort of sealed container after opening the bag?
A sealed container would work best.
