But what about the bouncing beans and the inconsistent grind when you don't have anything holding them down to go through the burrs smoothly?

Hmmm, what about that?
I've wondered if the reason for the need to grind finer towards the
end (as it empties) of my hopper is due to the beans staling©(Barry
Jarrett) or the lack of a stabilizing force, provided by the greater
amount of beans initially.

It's always sumpthin.

I have a Mazzer Mini for 5+ years. I will sometimes dose by the shot if playing around with SOs or blends. My 58mm tamper fits neatly in the throat of the Mini and does a good job of keeping the beans in the grinder but most of them are bouncing most of the way through the grind. I find I have to grind a notch or 2 finer on the adjustment ring than when there is a mass of beans holding everything in place. I know the coffee is fresh so that's not the issue. My guess is that the bouncing beans cause an inconsistent grind. I've never screened it so WTF do I know? I think weighing or counting beans on a regular basis is obsessive, but that's just my opinion.
