All coffee beans "outgas" (emit carbon dioxide) when they are fresh.
Because the Trader Joes beans are packed in a cardboard can with a foil
seal, the must be "degassed" before packing or the can would blow up like
a balloon. The way to let beans "degas" is to let them stand around for a
couple of days - in other words they are "pre-staled" even before they
are put in the can. The nitrogen flush only preserves them in their
already stale state. Not to mention that a nitrogen flush is no fountain
of youth - by the time you get the beans from TJ they may be up to a year
old. I consider espresso coffee to be a perishable product like milk or
bread and would no more buy year old coffee than I'd buy year old milk or
bread that was baked in 2006.
Just out of curiosity, how much degassing are we talking about here? I
roast my own coffee beans and place them in a sealed container. I've never
noticed any excess pressure escaping when I open the container, but I only
roast enough for a week, at a time. I also read another post where the
author stated that if you ground up freshly roasted coffee and brewed it,
you would get a fizzy drink (presumably from all the CO2). I must be doing
something wrong... lol.
